Beto’s Shredded Lettuce Salad

I’m not a salad-snob by any means. I don’t really care if the salad is made with romaine or iceberg or field greens as long as it has a decent buffalo chicken on top (with cheese, egg, black olives, bacon bits….). But to use shredded lettuce – the same stuff you put on top of a sandwich or taco salad – is just lazy.

But that’s exactly what a cow-orker had today at Beto’s Pizza. While the rest of us enjoyed their fantastic pizza, meatball hoagie or Italian sub, cow-orker #5 had a buffalo chicken salad with black olives, french fries and LOTS of tomatoes. Oh, and of course shredded lettuce.

Now if you’ve never had their pizza it’s great but it comes uncooked by default. A little unorthodox but it’s really pretty good. They use what seems like a full pound of mozzarella cheese. I like the uncooked pizza but lately I’ve been getting it cooked. Cow-orker #4 mentioned that the uncooked actually looks “healthy” compared to its cooked counterpart due to the amount of greese that pools in the corners of the pizza from all of the cheese and pepperoni.
